Zesty Chickpea Salad with Sprouts

Serves 6
Prep time: 5 minutes + standing

600g chickpeas, drained
1 lemon, zest and juice
45ml honey
45ml olive oil handful cherry tomatoes, halved
100g mixed sprouts salt and pepper to taste

1 Place the drained chickpeas in a bowl. Whisk together the lemon zest, juice, honey and olive oil.
2 Pour the dressing over the chickpeas and toss in the tomatoes and most of the sprouts. Season to taste and allow to stand for 15 minutes before serving.
3 Garnish with remaining sprouts for added colour.
